1. Taste
Since this is a cake mix, checking the balance of sweetness was the prime aspect under taste. Traditional Christmas cakes have warming spices like cinnamon, cardamom, nutmeg, and more. Were the flavors prominent or subtle? Or were they only present via aroma?
2. Texture
Usually, a slice of cake should be light, airy, spongy. A Christmas cake, on the other hand, is loaded with nuts and dry fruits, which lend a crunchy-chewy texture and thus is slightly denser than other cakes.
Was the Plattered cake mix as expected?
Did you know? Traditionally Christmas cakes are baked weeks before they are actually consumed and are allowed to ‘mature’ and firm up. As these contain a lot of nuts, its best to not consume it immediately as it would crumble. Those who bake them ‘feed’ them with rum everyday.

Price + Packaging
The cake mix comes in a non-resealable pack. It has some vibrant red Christmas-vibe graphics. ‘Vegan-friendly’ and ‘no added preservatives’ is what the pack reads. One pack holds 225 grams of the mix and is priced at Rs 249/- It has a shelf life of six months.
Main Ingredients
The cake mix is prepared with refined wheat flour, refined sugar, molasses, baking powder (edible maize starch, raising agents e500, acid e521), sodium bicarbonate, cinnamon, nutmeg, cloves, cardamom, allspice, salt.
You will need buttermilk, oil and mixed nuts from your pantry.
How we made the cake
We followed the instructions given on the pack.
In addition to the cake mix, we needed 100 ml buttermilk, 50 ml oil, 200 grams mixed dry fruits. To make buttermilk, we mixed 100 ml milk with 1 tsp vinegar, as suggested. Make sure the milk is warm, buttermilk will not be form if the milk is cold.
For a 100% vegan cake, the brand shares a vegan buttermilk recipe. To make vegan buttermilk, add 1tsp vinegar to ½ cup (100ml) soy milk. Stir. Wait for 5 minutes, vegan buttermilk ready.
Once the wet and dry ingredients were combined, we greased the baking tray, preheated our oven, and let the cake bake for approximately 35 minutes.
Before taking it out, we performed the toothpick test and once it came out clean, the cake was ready for tasting.
We made sure that the cake had cooled down before demoulding and cutting into it.
Aroma + Appearance
In terms of aroma, this cake mix was truly Christmas in a pack. It had warming notes of cinnamon and nutmeg. The cake had risen beautifully and developed a nice, brown crust.
Taste + Texture
The flavors were impeccable! Balanced sweetness, impressive taste, but what we loved most was how seamlessly the flavors of spices (cinnamon, nutmeg, cloves, cardamom, allspice) came together. Truly a delight to eat.
Unfortunately, the texture was slightly disappointing. While the pack recommends adding 200 grams of dry fruits, we’d say 120-150 grams would be sufficient. What went wrong with the texture of our cake was that the raisins settled to the base, leading to an extra moist, almost wet parts of the sponge cake. While we liked the crunch nuts added, it was a bit too much. We could barely get one decent slice, the cake wasn’t sturdy enough. That said, it was baked well, there were no raw bites. We liked the firm, crisp crust formed on top.
Our advise is to dust the nuts with flour slightly so that they don’t sink to the bottom. The pack needs more information for novice bakers.
