Fool-Proof Strawberry and Cream Cake Recipe For Beginners

Method

Firstly, line the cake mold with some parchment paper and grease it with some butter or oil. Let the butter soften and then add the sugar(100grams) to it. Whisk them together until the sugar is dissolved properly and the creamed butter is smooth.

Break the eggs into a separate container, mix them well and keep aside. Once the butter is creamed, gradually add the eggs to the mix in parts. Keep whisking every time you add the eggs. Once this is well mixed you are ready to add the dry ingredients.

Sieve in the flour, baking powder and salt into the creamed mix. Add the vanilla essence. Mix the dry and wet ingredients with the help of a spatula. Begin by slowly running the spatula along the sides of the bowl and then bring the spatula towards the center of the bowl. Repeat this motion until the ingredients are mixed well but not for more than a couple of minutes.

Pour the batter into the cake mold (fill only 3/4th of the mold). Bake the batter at 175 degrees Celcius for 15-25 minutes. To check if the cake is done, insert a toothpick close to the center of the cake. If the toothpick comes out clean then the cake is ready.

Let the cake cool down. Meanwhile, chop up the strawberries, move them to a bowl with some sugar (50 grams) and set aside.

Boil the water along with the remainder of the sugar to make a simple sugar syrup. This will be used for keeping the sponge moist. You can also reduce the amount of sugar you add to this water if you want to.

With the help of a whisk or a good electric mixer, whip the whipping cream till it forms stiff peaks.

Now if you check the strawberries, you’d be able to notice that there’s a lot of juice in the bowl, released from the fruit itself. Add this juice to the sugar syrup.

Once the cake has cooled, begin to prep the sponge by cutting the curved top off to make the top nice and level. Then cut the cake into two layers along the side.

Start with the base sponge. Drizzle the sponge with the sugar+strawberry syrup. Once the cake has soaked up enough of the syrup, add a layer of whipped cream. You do this with a spatula or use a plain piping bag for easier layering. On this layer, add the cut-up fresh strawberries. Retain some of the strawberries for decorating the cake.

Place the other sponge layer over this and repeat the process of drizzling the syrup over it. Then begin to cover the cake top with a layer of whipped cream just as before but in a thinner layer. Do the same for the sides of the cake but add an even thinner layer of whipped cream. Once this step is complete let the cake set in the fridge for about 30 minutes.

Begin decorating the cake with the leftover whipped cream. You can use piping bags with nozzles of your choice to decorate the cake. If not, you can always go for a simple look by not coating the sides and adding more whipped cream on the top and placing more strawberries. You can even make it more fun by adding some cake sprinkles that easily available in the market.
