Packaging- This shrikhand is offered in a small plastic cup with a flimsy lid. It is seal wrapped but the lid does not fit securely. This offers 1-2 servings.
The main ingredients are milk solids, sugar, elaichi, stabilizer (INS 440), and added natural flavors.
What is INS 440 and why is it in my Shrikhand?
INS 440 is an emulsifying and stabilizing agent extracted from fruits. Pectin from fruits, a white/pale brown colored powder, helps add texture and thickness. The riper the fruits, the higher the pectin content.
Appearance- With an off-white appearance, we could see some cardamom seeds. The consistency looks even throughout, there was no separate layer of water or whey floating.
Flavor- Shrikhand, though primarily sweet, has some sour undertones owing to the fact that curd is the base ingredient. Milky Mist Elaichi Shrikhand showcased a decent balance between sweet and sour flavors.
The sweetness may seem mild for those with a high sugar tolerance.
A commendable point is, the brand does not use just added cardamom flavor, but the real ingredient too! The bites with cardamom seeds featured a burst of refreshing flavor.
Texture- We were fairly disappointed here. Smooth, rich, and creamy is what we expected. However, this packaged shrikhand had a slightly grainy texture. Moreover, it lacked the signature creaminess shrikhand is known for.
Freshness- On point! The distinct sourness of curd tasted here was desirable. At no point did the shrikhand taste stale or rancid. Thumbs up!
