Freshness and intensity of flavor were checked. We wanted to see if it tastes rancid or has the characteristic fruity-bitterness? You know, just like biting into an olive.

3. Color & Consistency

Flowy, dense, cloudy, clear, yellow tones or green tones? We considered some important physical attributes while reviewing the olive oil.

Although color alone is not a parameter the oil should be judged on for quality, a good quality olive oil usually has a golden yellow-dark green color. The darker green olive oils taste more grassy and fruity. Yellow-hued olive oils are more peppery/spicier.

The oil comes in a small, handy glass bottle which is easy to hold and pour from. The lid is easy to screw and unscrew and features a plastic nozzle. The only ingredient used is extra virgin olive oil. 

How did we test this? After the product inspection and aroma-check, we conducted a taste test. We tossed together de-seeded tomatoes, basil, pepper, salt and olive oil. We did not clutter the salad with too many herbs or spices as judging the flavor of olive oil was our top priority. We also used it to drizzle on top of our hummus

Appearance, color and consistency – Fragatta’s olive oil is thick and flowy. It’s not dense or cloudy. This oil is clear and has a healthy olive green color. When poured into a white bowl, it leaves a slight greenish-yellow stain. 

Aroma – This olive oil has medium-level pungency. It has a fruity aroma with a hint of olives.

Tasting notes – The extra virgin olive oil does not taste rancid and it isn’t flavorless. This has a medium pungency level. This is flavorful olive oil with light peppery notes and a delicate fruity flavor. Throughout our testing phase it helped elevate the taste of the dish – be it the hummus or the salad. The intensity of olive oil helped intensify the flavor of the salad as well.
