Recipe – Chicken Tikka Marination using Mustard Oil

A platter of spicy chicken tikka can be a show stopper in your house parties and celebrations. It is super simple to make and takes very little effort.

Take about half a cup full of mustard oil and heat it slightly. Once the oil is hot, pour it out into a large bowl. To this add about 4 tablespoons or more of red chili powder. Let it sit for a couple of minutes or until the oil is warm but safe to touch. Mix the oil and chili powder well. To this, add hung curd, turmeric, and salt as required. Make sure you don’t add too much hung-curd, about three handfuls should be enough. Mix these well to make a nice, homogeneous marination. Add black salt, cumin powder, coriander powder, chaat masala, garam masala, and very little yellow chili powder. Add some more salt is required and some processed cheese(optional). If you are feeling fancy, feel free to fry and add some cashew nut paste (very little) to the mix. This is your tikka marination.

Let the chicken pieces rest in some lemon juice, ginger garlic paste and nutmeg powder for 15-30 minutes. Then, move it to the tikka marination and mix well. Refrigerate until ready to cook.

Conclusion
