The pancake mix is packed in a thick plastic pouch that is resealable. The brand also offers plastic-free packaging.

Flour (70% – Oat flour, Jowar flour), Jaggery powder (22%), Natural Alkalised Cocoa powder, Freeze-dried Curd, Natural Chocolate Flavor are the ingredients used in this pancake mix.

3. Taste

The taste of these chocolate pancakes justifies the addition of oats and jowar. This is to say that the natural flavor of this flour mix overpowers that of chocolate. Just like the chocolate flavor, the sweetness is mild too. 

4. Texture

Following the instructions on the pack, we let True Elements’ batter rest for around 30 minutes. It had absorbed most of the water and turned quite gloopy. 

To revive the characteristic batter consistency, we added a few more teaspoons of water, until it was thick but flowy. 

5. Appearance

These pancakes had a rich, chocolate-brown appearance once cooked.

6. Aroma

In the dry, pre-cooking, and post-cooking stages, an inviting chocolatey aroma was observed.

Per 100 grams, this pancake mix offers 396 Kcal which is divided as 80.9 grams of carbohydrates (9.1 grams of which is naturally occurring sugars), 5.6 grams of protein, 3 grams of fiber, and 5.5 grams of fat.

Before discussing our experience with this pancake mix, we’d like to shed some light on the ingredients and how they are processed.

Natural Alkalized Cocoa Powder- The dry residual fiber that is left after cocoa butter is extracted from beans is called cocoa powder. When this powder is pressed and ground, without any additives, it is known as natural cocoa powder. Since natural cocoa powder is highly acidic, it doesn’t mix easily with milk or water. To solve this challenge, Dutch chemist Coenraad Johannes van Houten treated the natural powder with Alkali salt, and hence it is called natural alkalized or Dutched cocoa powder. 

Freeze Dried Curd- The purpose of processing curd in this manner is to enhance the shelf life of the product. When the water content of curd is extracted at low temperatures, we call it freeze-drying. Unlike dehydrating food items at higher temperatures, dehydration at lower temperatures retains the overall quality once rehydrated!

We used a non stick pan to cook the pancakes.

As mentioned above, in powder form, this mix emitted a lingering aroma of chocolate. 

The brand does not mention the powder to water proportion, but we added around 3/4th cup of water to one cup of the powder. Once mixed, the batter was flowy but not smooth. We could see bits of oats floating in it. 

After letting the batter sit, it had dried up a bit, as mentioned above. We made some pancakes with this batter. 

For cooking, we brushed some refined oil on our heated Amazon Solimo Pan (nonstick)

This thickened batter required relatively more effort to spread. It soaked up a considerable amount of oil. 

For the next batch, we added some more water to the batter, until it was flowy but thick. This time the batter could be spread easily.

The final result was soft and fluffy. That said, compared to pancakes made with refined wheat flour, these weren’t as soft. They felt relatively denser on the palette, owing to the fact they are made with oats and jowar. 

In terms of taste, sweetness and chocolate flavors were quite low for us. We spread a generous amount of DiSano’s chocolate spread which fortunately uplifted the overall taste.
